Chocolate Banana Bread Recipe

We came across a real good deal on ripe bananas and decided it was time to make some banana bread for the freezer. This recipe is so good! I love having several loaves in the freezer to pull out for company or even to take for someone who is struggling or for a hostess gift. I wrap mine individually and then place in a freezer ziplock.

This is a great recipe for beginners. I showed Cherish (10) how to make the first batch and she made the remaining 3 batches without me.

 

Chocolate Banana Bread

Sift in a bowl:

  • 1 3/4 c. flour
  • 1/4 c. unsweetened cocoa powder
  • 1 c. sugar
  • 1 t. baking powder
  • 1/4 t. baking soda
  • 1/4 t. salt

Mix in another bowl:

  • 2 large eggs, lightly beaten
  • 1 stick butter, melted and cooled
  • 3-4 ripe bananas, mashed well
  • 1 t. vanilla extract

Add the banana mixture into the dry ingredients, be careful not to over-mix.

Gently mix in:

  • 1/2 c. semi-sweet chocolate chips

Grease your loaf pan.

Bake at 350 degrees for 55 to 65 minutes until the bread has risen and a toothpick inserted in the center comes out clean.

Cool completely before wrapping.

We have an abundance of cucumbers from our garden right now. I made this recipe for the first time today. It.Was.So.Good! I didn’t have any jalapenos on hand so it didn’t have that kick to it, but it was delish nonetheless!

For supper I topped my hamburger with it. Again, it was so good!

Chop, combine, cover and refrigerate until serving.

ALWAYS use gloves when working with the peppers… and NEVER touch your face!

Yield: 2-1/2 cups.

  • 2 cups finely chopped fresh pineapple
  • 2 cup finely chopped seedless cucumber
  • 1/4 cup lime juice
  • 1/4 cup chopped onion (red adds a nice color - I didn’t have any today)
  • 2 tablespoons chopped fresh cilantro
  • 4-1/2 teaspoons chopped jalapeno pepper, seeds removed
  • 1 garlic clove, minced
  • 1 teaspoon sugar
  • 1 teaspoon grated lime peel
  • 1/4 teaspoon salt

A sweet friend gave us a couple of gallons of blackberries…big, juicy blackberries! Which means my very capable assistants and I had to get busy!

Now… the downside of blackberries are all those little seeds.

The first thing I did was run the berries through the food processor. Let me just say, I LOVE THE FOOD PROCESSOR! It really does make kitchen work so much faster!!!

Then my hard-working Cherish used this old-fashion strainer and wooden pestle, which you can find at thrift stores and yards super cheap!

We made 16 pints of jam and syrup.

I adapted this recipe from AllRecipes.com, added lemon juice, butter and 1/2 a package of pectin rather than 1/3 package. Butter makes all the difference!

Blackberry Syrup

4 cups blackberry juice

4 cups white sugar

1/3 (2 ounce) package powdered pectin

3-4 T lemon juice

1/2 stick of butter

Cheese straws are definitely a southern thing!

I made these a few weeks ago for a wedding reception. They are really easy and MUCH cheaper if you make them yourself rather than buying them pre-made.

And when you want southern food it is best to learn from a southerner. I love Paula Deans recipes.

Cheese Straws

1/2 cup (1 stick) butter, at room temperature
2 cups shredded sharp Cheddar, at room temperature
1 1/2 cups all-purpose flour
1 teaspoon salt
1/4 teaspoon cayenne pepper

I did not use a cookie press to make them, I rolled them out and cut them with a pastry wheel - super easy!

Here are a few tips for making a moist chocolate on chocolate cake.

I almost always use a box cake mix for my orders.

There are a couple things you can do to make them a little better:

  • Use dark coffee instead of water. Make sure it is at room temperature.
  • Use extra large eggs, again, at room temperature.

Baking Tips:

  • Always pre-heat your oven.
  • Do not over bake.
  • Use shiny cake pans. If you use glad or a dark, non-stick pan lower your oven temperature by 25 degrees.

Icing:

  • Use almond extract rather than vanilla. EVERY time I make this people are pleasantly surprised and ask what’s in it. Here is my favorite recipe.
  • Butter or half butter and Crisco makes a rich flavored icing.
