Wash and dry strawberries and melt chocolate chips in the microwave or double boiler.
Using a small paring knife cut the tops off and carve out a hole without going through the berry.
Dip the bottoms in the melted chips and place on freezer wrap or parchment paper to let them harden.
Whip together 1 package of cream cheese, 1 tsp. vanilla, and 1 cup 10x sugar.
Fill a pastry bag with the cream cheese mixture; use a star tip or round tip to fill the strawberry.
Crush some almonds.
Gently dip the berry in the crushed almonds.
Drizzle the top with some melted chocolate.
