A walking foot has built-in feed dogs that grip and move the upper layer of fabric that travels through the sewing machine together with the machine’s feed dogs, which grip the underside of the fabric. The foot helps keep the layers from shifting as they move through the machine. A walking foot is essential for pucker-free machine quilting and when you sew together the multi-layers of fabric and when you work with heavy fabrics such as denim.
A walking foot also allow you to sew on your binding or sew a hem down without it rolling and puckering.

I sew a LOT of minky, and it’s impossible without the walking foot. The stuff slips and slides against itself with every little movement. I just pin, pin, pin, then use the walking foot (I sew right over the pins.) and it’s saved me a lot of frustration.
I don’t think you’d need the foot for denim, though, unless you had several layers.
