Whole Wheat Blueberry Pancakes

Whole wheat blueberry pancakes are a very healthy breakfast! I always make a bunch at one time, that way we can have them several times that week, they are also a great snack for growing kiddos!

My recipe varies from time to time depending on what I have on hand. Sometimes I use buttermilk, or fruit juice, or just water as the liquid.

This week I had some raw cow’s milk curiosity of Olivia, Samantha and Addy the cow!

AND… fresh eggs from Olivia’s chickens!

The Recipe

Mix together:

1 cup whole wheat flour

1/4 cup ground flax seed

2 tablespoons honey

2 teaspoons baking powder

1/4 teaspoon salt

1 egg

1 cup milk

2 tablespoons oil

1 teaspoon lemon zest

Then:

Fold in 1 cup fresh blueberries

additional oil for frying

I cook mine using my cast iron skillet!

You know when to flip them when the edges are getting all bubbly looking.

Top with your favorite syrup, ours is pure Upstate New York maple syrup!
