Today’s Table – Chicken Salad

Chicken salad, on green leaf lettuce, fresh veggies (grape tomatoes and cucumbers). Of course hubby had left over enchiladas with his, because chicken salad just ain’t enough to satisfy  a hard workin’ man!

Chicken Salad

(No exact measurements)

4-5 Shredded cooked chicken breast

Sliced seedless grapes – a cup or so.

Chopped – pecans a couple hand fulls.

Mayo – enough to moisten it.

Curry Powder 1 tsp. (optional)

You can also add diced apples and dried cranberries.

    My husband fixed Chicken salad for our 50th wedding anniversary. (Yes, we helped with our own party) We have had a lot of requests for it ever since. Includes chicken, chopped unpeeled apples, celery and Miracle Whip. Could use mayo if you prefer. Delicious!
