HERE is a little quiz about pumpkins.

~
My first recipe will be an EASY one for

THREE  Ingredient Pumpkin Gems!

Ingredients:

A Cake Mix
(something that will go with pumpkin flavor, chocolate, spice, yellow, etc)
1 can 100% Pumpkin
(not pie filling)
DO NOT ADD WATER AND OIL

OPTIONAL:
2 eggs

(eggs add to a lighter texture, more cake like,
but you can do this without eggs and the texture will be more dense
like a pumpkin bread or muffin)
Chocolate Chips
Walnuts or Pecans

Mix 1 cake mix and 1 can of pumpkin (optional eggs) until smooth.
Add nuts and chocolate chips

Using a small ice cream scoop (thanks to Dana for this tip)
scoop batter into mini muffin pans.
Bake on 350 for about 15-20 minutes.

This batch was made with a chocolate cake mix and a yellow cake mix.
You could even use loaf pans to make Pumpkin Bread.
Make these ahead of time, freeze them and you’ll have a treat ready for fellowship gatherings in an instant!

One year after going to the pumpkin patch and getting 4 pumpkins we decided we would use two of them to make pumpkin pies. However we decidec to use the shells for something decorative and just clean out the inside! So my dh and I started trying to clean out the insides and get all the pumpkin out. It took us forever to get all the “pumpkin” out of the pumpkin!!! It actually took 4 hours!!!! I decided right then that next time we would forget about using the shell as decoration and either cut that thing up or just use the can stuff!!!!! :) I’ll never forget that night. It was a funny thing to watch!

    I’ll post a link too!

Your recipe looks great. I have made these before and they are really good but I like your idea to make it into a loaf. Since it is pastor appreciation month, maybe the loaf could be given to a pastor! Thanks for the idea! I love your blog.

  3. Karla says:

Thanks for the recipe. I learned never to use a large pumpkin to make pumpkin pie. I tried that once and the end result is that it didn’t smooth out. SO, I only use medium size ones, now.

I will post your link on my blog, too!

  4. Julie in Fl says:

Sometimes with our little ones we buy little pumpkins and give them markers to decorate with. I don’t mind getting messy but if we don’t have time to carve a pumpkin this works well. :)

  5. Stephenie says:

I don’t really have a pumpkin tip or recipe to share, but your recipe looks very yummy. Something we might use next week while feeding the missionaries at our church’s mission conference! Please enter me in your drawing. I enjoy your website very much.

I thought I would share this joke that I got from the Good Clean Funnies List last week – I could just imagine this happening! Enjoy! :-p

    Tea Party

One day my mother was out and my dad was in charge of me and
my brother, who is four years older than I am. I was maybe
one and a half years old and had just recovered from an
accident in which my arm had been broken, among other
injuries. Someone had given me a little tea set as a
get-well gift, and it was one of my favorite toys.

Daddy was in the living room engrossed in the evening news
and my brother was playing nearby in the living room when I
brought Daddy a little cup of “tea,” which was just water.
After several cups of tea and lots of praise for such yummy
tea, my mom came home. My dad made her wait in the living
room to watch me bring him a cup of tea, because it was
    “just the cutest thing!”

My mom waited, and sure enough, here I came down the hall
with a cup of tea for Daddy and she watched him drink it up.
She then asked, “Did it ever occur to you that the only
place that baby can reach to get water is the toilet?”

Cute potholders! And the recipe sounds yummy, too … my 10 yo dd wants to try that soon. I don’t have any funny pumpkin stories, but I can say that I have 2 pumpkin pies cooling at the moment … that same 10 yo was bored and asked if we could make a pie and since canned pumpkin is all we have right now, that’s what we did LOL! Sure makes the house smell yummy …

  8. We just enjoy carving pumpkins with happy faces.
We read Liz Curtis Higgs’ book for children about pumpkins.

    God bless!
    Laura

  9. Tina says:

A yearly recipe we enjoy for fall is peanut butter ball pumpkins! These are easy & fun to make, but a little time consuming and I lose my helpers midway through, but we all enjoy! We use a regular recipe for peanut butter balls, but put orange food coloring in the mixture! After rolling out the balls, I use a toothpick and make vertical indentations and place a chocolate chip on top. There you have cute little pumpkins! Thanks, Tina

  10. Courtney says:

Fun contest! I just read a neat recipe that called for adding chunks of pumpkin to traditional beef stew for a fall twist on a favorite. We are trying it this week :o )

    Blessings,
    Courtney

thanks for entering me in your contest.

  12. Susan says:

I love the recipe—how easy. We tried pumpkin for the first time last year with our children. Now it has become one of their favorite ingredients. I even use a can of it in carrot souffle in place of the carrots. It gives the same great color—beta carotene—and a fun taste. Thanks too for the giveaway.

  13. Angela Cribb says:

This recipe looks yummy. I think I might try it. I will link back to this so others can enter too. Thanks for all the wonderful ideas you give us.

  14. Jill says:

I really love this recipe. My favorite way to do this is to use a spice cake mix. Delicious!
Also, on my blog I’m posting a link and including another it there. http://praiseworthythings.blogspot.com/2008/10/well-it-has-been-awhile-hasnt-it-i.html

  15. Michele says:

When my now grown daughter was about 4 yrs old, we took her to the grocery store about this time of year. They had a gigantic pumpkin in the store as a display and a bowl to write down your guess of how much that big pumpkin weighed. Well our daughter wanted to guess and she put down the number she wanted. Well, we received a call later that week that her guess was the closest…AND SHE HAD JUST WON A PUMPKIN THAT WEIGHED
OVER 90 LBS. We put it out in the back yard and carved it like a cat, her favorite animal. We will never forget that pumpkin story.

  16. Mandy says:

You can take we be little pumpkins (the tiny ones that look like pie pumpkins) and cook a meatball in them with a little spaghetti sauce and it tastes FANTASTIC!
We love pumpkin in this house. We add it to cake, muffins, pancakes, oatmeal, and anything else we think we can get away with. We use it place of oil when baking around this time of year. It’s wonderful when added to homemade pancakes (don’t forget to mix in a little pumpkin pie spice) then topped with maple syrup. YUMMMMMMMM!

I LOVE that you are having a pumpkin week! That might just be my favorite week! My kiddos and I are enjoying your site… We’ll be baking tomorrow!

Thank you for your contest as well, and the entry into it.
    Mandy

  17. Dee Dee says:

I made pumpkin bread for the first time today! I’m still learning too. Our largest bowl barely held all the ingredients. My little ones were ready to stir but kept sloshing everything out. We had so much fun we didn’t care.

  18. Mellissa says:

Thanks for the yummy recipe! My hubby LOVES pumpkin. The chocolate chips just might get the kids to eat some too!

What a cute set of potholders. Enter me please! This would be so cute for Thanksgiving …. well anytime really.

I also posted a link on my blog of your give-a-way.
    http://heart4myhome.blogspot.com/2008/10/pumpkins-anyone.html

My pumpkin tip…after carving your pumpkin rub a thin layer of petroleum jelly on the inside of the pumpkin. This will help it last longer and not go so soft and mushy on you. So that jack-o-lantern will look pretty on the porch for much longer than normal.

  22. Marci says:

Have made very similar to these with spice cake mix for several years. Will need to try the German Chocolate now. Had forgotten about using the icecream scoop so thank you so much Dana for the reminder. Would love to have the pattern for the pumpkin potholders. Your blog is incredible and homey!

  25. Janet Watson says:

The potholders are soooooooooo cute and would look perfect in my kitchen. Please enter me for the pumpkin potholders.

  26. Tamara B. says:

We love to make dried pumpkin seeds in the over and lightly salt them. It is a healthy snack for us and they are really great. The potholders are just gorgeous, please enter me.

  27. Julie says:

One of my favorite memories is of carving pumpkins with my toddler several years ago. He scooped out some of the ‘yuck’ in his hands, looked at it, and with wonder proclaimed ‘Wocks! Wittle White Wocks!’ He then proceeded to throw his ‘rocks’ across the table with glee.

  28. Rebekah says:

Don’t have a recipe or a funny story, but a question. How do you store pumpkins and how do you know when they are unusable? Yep, I’m a novice. Thanks for entering me in your drawing.

  29. Leanne says:

Every year I take our pumpkins, cut them up and freeze it. I LOVE having pumpkin throughout the year. We make pumpkin pies for the holidays, pumpkin muffins, pumpkin bread, pumpkin pancakes, pumpkin butter, the list just goes on!
I get great joy out of being able to bake and share with our family and neighbors…to me it makes the holidays that much more special to be able to share something that was created at home and not some store bought item.
My kids are excited to know that I am trying your muffin recipe with chocolate chips!! My kids LOVE chocolate!!!!

  30. Jen says:

We usually get a lot of pumpkins and let the kids decorate them. We do not carve them, because after we do I cut them up puree them and freeze them. We dry the pumpkin seeds for a yummy snack. I am going to try the muffin recipe later today.

  31. Sue D says:

I don’t have a pumpkin story but would like to be entered in the giveaway for the beautiful potholders. We usually grow our own pie pumpkins but this year some critter kept eating the plants so we only ended up with one pumpkin!

  32. Greta says:

Love this recipe. Thanks for sharing. Have a wonderful day

  33. Kimberly says:

We had a “volunteer” pumpkin come up this year! We usually get a few from family that grows them and just sit them on the porch. Sometimes the kids like to paint on them. This year my youngest wanted to carve one so we let him pick the “volunteer” and carve it. He did a wonderful job.

Am I right in assuming that is one of the smaller cans of pumpkin in that recipe?

  34. Kathy says:

    Ho Kimberly,

Yes, that is one of the smaller cans of pumpkin.

We had a strange vine/veggie come up out back deck this year. The vine was AMAZING and huge. It grew something that looked like a zucchini, but it wasn’t.

    :o )

  35. Rebekah says:

Yummy! I can’t wait to try this with my daughters! We like to make pumpkin pie, pumpkin bread, and our very favorite. . .Cranberry Pumpkin Bread.

Thanks for sharing your marvelous ideas!

  36. Rachel says:

I like feeding the pumpkin seeds to my hamster! :)

  37. Loretta says:
