How to Can and Not Heat Up the Kitchen

We’re still working on canning at our house. Right now we are getting tomatoes and peppers at great prices! Jeff and Emma picked tomatoes for $4.00 a box today, can’t beat that!

The down side of canning is that it heats up the kitchen something awful. So to apply some of our outdoor cooking techniques we thought of using this turkey fryer and putting the canner on top OUTSIDE!

Even though I still had to sterilize the jars and scald the tomatoes inside, it was 100 times better without having the canner boiling away in the house for hours! We have an electric stove and using a gas burner was so much faster, and easier! Olivia bought this larger canner at a antique shop for $6.00. I love it because it fits 12 jars!!!

Today we finished 28 quarts, and I still have about 1 1/2 boxes left to can.

Jeff watched the boiling pot while I worked in the house skinning tomatoes and packing jars! I can’t complain, he and Emma did all the picking!

 

This has nothing to do with canning, but I thought it was so funny when Emma anxiously called me outside to look at this spider’s web. She called it a "zigzag stitch"! Ahhh…only a quilter or seamstress would use the term "zigzag stitch" She made me proud! lol

    Wow! A 12 jar canner! How wonderful. I have been scalding, chopping, and freezing my tomatoes. I will be working on more pears this weekend. I have been thinking about a way to do this outside so as to keep the house cooler. I will have to show my hubby this.

    That 12 jar canner is awesome! I only have one that fits 7. I am also doing tomatoes right now. My garden has done really well is year, and I am busy make my tomato juice blend.

    I am canning the pears. Just coring and slicing them. I then make a sugar syrup using the Extra Light Measurements in the Ball Blue Book. I cook the pears until they look “good” to me and then process them. They are so delicious!
