How to Blanch Squash to Freeze It

June 22, 2010

Emma!

Everyone here has tons of yellow squash coming in.  Today Emma and I blanched a bunch to get it in the freezer. HERE is a great tutorial with pictures on how to blanch and freeze all those veggies from my favorite canning site!

These will be great this winter in stir fry and squash casseroles!!!

I used that same website for freezing my squash on Saturday! :-) I really like that site. We are doing much better this year than we did last year, but I’m thankful for your Gardening Challenge last year b/c it was so instrumental in getting me motivated to begin growing more of our own food and preserving it for our family. I am always afraid to fail, so many times I don’t even try. Your challenge last year helped me to be okay with failing. All we had were a few tomatoes last year. This year we have cucumbers and squash. Tomatoes on the plants and okra, corn, melons and beans are coming along. A little better but still room for improvement next year.
    Thank you!

    I know this is a bit off-topic (well… maybe a tad more than a bit) but….. I love Emma’s T-shirt! :)
